Roasted Potatoes Side Dish

This is a yummy and healthier alternative to French fries or home fries.  The herbs give this dish an aromatic mouth-watering flavour which means you will need less sodium.

What I used:

3-4 potatoes – I used a variety of white, red and sweet potatoes
1 small onion, diced
2 cloves of garlic, crushed
4 sprigs of rosemary
4 sprigs of thyme
Salt and pepper to taste (if necessary!)

Directions:

1. Rub a bit of coconut oil on the bottom of a baking dish – this is so the potatoes do not cook to the bottom of the dish. Cut up potatoes in small pieces and place in baking dish.

2. Chop up onion and garlic and add to baking dish.  Mix well so the onion and garlic is distributed throughout the potatoes.

3. Add the rosemary and thyme.  Pull the herbs off of the sprigs and mix into potatoes, onions and garlic.

4. Set oven to 385°F and bake potatoes for 45-60 minutes.  The size of the pieces of potatoes will determine how fast it will bake – the smaller the pieces, the faster it will bake.

Serve these potatoes as a side dish to any protein – they are great with fish, chicken and for breakfast with an omelette.
